5 Foods with Huge Carbon Footprints

When you bite into a hamburger or enjoy a pile of roast asparagus, do you think about the impact it has on the environment? Well, maybe you should.

See, the food that we eat has an incredible impact on climate change. In fact, agriculture is one of the largest sources of greenhouse gases like carbon dioxide and methane. What foods we choose to buy, howwe choose to purchase them and how often we consume them matter to global warming.

And not all foods have an equal impact.

Livestock and their byproductsaccount forat least 32,000 million tons of carbon dioxide (CO2) per year, or51percentof all worldwide greenhouse gas emissions. And agriculture is responsible for80-90percentof all United States water consumption. That’s crazy!

Here are the top five offenders.

5 Foods with Huge Carbon Footprints

In 2011, CleanMetrics Corp., a Portland, Oregon-based environmental firm, published a report called “The Meat Eater’s Guide to Climate Change & Health.” Based on that report, these foods are the most ‘environmentally impactful’ based on their greenhouse gas emissions. (Be sure to check out their methodology in the report itself.)

Each of these foods was studied from a variety of angles: emissions produced before a product leaves the farm (i.e. use of fertilizer and pesticides, irrigation, impact of animal feed) and emissions produced after the product leaves the farm (i.e. food processing, transport, retail, cooking and ultimately waste disposal).

Here are the results, in kilograms of CO2:

1. Lamb – Produces 39.2 kg CO2 during its lifetime.

2. Beef – Produces 27 kg CO2 during its lifetime.

3. Cheese – Produces 13.5 kg CO2 during its lifetime.

4. Pork – Produces 12.1 kg CO2 during its lifetime.

5. Farmed Salmon – Produces 11.9 kg CO2 during its lifetime.

And it’s not just animal products that are the problem.Potatoes produce the most emissions of all protein-rich plants,followed by asparagus, avocados, bananas and eggplant. Most of these require air freight to different parts of the world, because they only grow in warm climates.

What can you do about it?

Every single day, a person who eats a vegan diet saves 1,100 gallons of water, 45 pounds of grain, 30 square feet of forested land, 20 pounds CO2 equivalent and one animals life. That’s seriously convincing!

Here’s what I want you to hear most:food is power.You have an incredible amount of influence in the palm of your hand. What will you do with it?

Reducing (or eliminating) your meat intake hasinnumerable benefits. Youll contribute significantly to the causes of conservation and lowering greenhouse gas emissions, and youll look and feel better in the process.

Here are some tips to get you started:

  1. Learn about the impacts of the agriculture industry. Get to know the facts and equip yourself with knowledge.
  2. Don’t feel pressure to change your entire diet in one day. Take it bit by bit. Start by eliminating red meat, then chicken.
  3. Slowly integrate plant-based meals into your weekly routine. Once you have some recipes you know you can count on, phase out the rest.

Alreadyeating a plant-based diet? Make it a point to shop in season and shop local whenever possible, if not always!

Norway may be best known as the birthplace of the cheese slicer, but now the country can claim something even more inventive: Norway’s parliament pledged on Tuesday to go carbon-neutral by 2030, a full 20 years ahead of its original goal.

This is a direct response to the commitments Norway took on by ratifying the Paris agreement and means that we will have to step up our climate action dramatically,” Rasmus Hansson, leader of the national Green Party, told the Guardian.

Still, the decision was not an entirely harmonious one. Norway’s minority Progress and Conservative parties don’t support it, arguing that ambitious cuts now could make the country worse off in future climate negotiations. Even the country’s climate minister, Vidar Helgesen, isn’t happy.

The plan does lack any specific targets emissions cuts — for instance, Norway could achieve carbon neutrality by funding carbon offset programs elsewhere and trading carbon credits through the European Union’s emissions market.

Besides, while Norway’s carbon-neutral plan is ambitious and the country tops the world for investment in  bicycle highways and electric vehicles, it is also one of the world’s largest oil producers. Just last month, the country controversially announced it will be opening the Arctic’s Barents Sea for oil exploration, after declines in global crude oil prices cut state revenue. And as ThinkProgress points out, Norway’s emissions increased last year to a higher level than it saw 1990.

Norway’s big ideas are, at the moment, just ideas.

Stop everything: The U.S. has been hoarding a massive stash of uneaten cheese weighing in at around 1.2 billion pounds — without telling you! To work off that surplus, the Wall Street Journal points out, everyone in the United States would have to eat an extra three pounds of cheese this year.

“No problem!” you say, rolling up your sleeves. But wait — before you take up your duty as a citizen and stuff your face with equal parts deep-fried mac and cheese and crêpes au fromage, consider this: That quantity of cheese consumption might contribute to global destruction.

We’re only being a bit hyperbolic, because it turns out that a block of muenster has a pretty monstrous climate impact. One study declared cheese the third-worst animal food product for greenhouse gas emissions, following beef and lamb. Chicken, tuna, and eggs all have lighter carbon footprints. Here’s why: To create cheese, you need a lot of milk — about 10 pounds of milk per pound of hard cheese, to be precise — and the dairy cows who produce that milk also produce a lot of climate-changing methane.

America’s cows are expected to produce a record-breaking 212.4 billion pounds of milk this year. Much of that will be sold to cheesemakers, who are currently hoarding big blocks of cheese in freezers and waiting for prices to rise.

Why? The Wall Street Journal reports that two years ago, farmers expanded their dairy operations to meet high demand, particularly from overseas. But now dairy prices have dropped and the dollar has climbed, so our friends around the globe aren’t buying as much of our queso dip anymore. But all those extra cows are still around, pumping out methane and milk. Mmm!

When it comes to America’s cheese situation, it looks like we just have too much of a … gouda thing.

Over at Wonkblog, Roberto Ferdman passes along some fascinating new research on the frustrating problem of getting kids to eat their vegetables in school lunches:

It turns out there might be an ingenious solution hiding beneath everyone’s nose.

Researchers at Texas A&M University found there’s at least one variable that tends to affect whether kids eat their broccoli, spinach or green beans more than anything: what else is on the plate. Kids, in short, are much more likely to eat their vegetable portion when it’s paired with a food that isn’t so delicious it gets all the attention. When chicken nuggets and burgers, the most popular items among schoolchildren, are on the menu, for instance, vegetable waste tends to rise significantly. When other less-beloved foods, like deli sliders or baked potatoes, are served, the opposite seems to happen.

So let me get this straight. The way to get kids to eat vegetables is to serve them crappy-tasting food that makes the vegetables seem good by comparison? That’s the ingenious solution?

Yes indeed. So if we just starve the little buggers and then give them a choice of steamed broccoli or vegemite on wheat, they might go ahead and force down the broccoli. And since you are all sophisticated consumers of the latest research, I’m sure you want to see this in chart form. So here it is for veggie dippers (notably, a “vegetable” already disguised with mounds of ranch dressing). As you can see, when paired with yummy Chef Boyardee ravioli, the kids turn up their noses at the dippers. But when the entree is a yucky sunbutter sandwich, kids cave in and sullenly eat more than half of the little devils.

This all comes from “Investigating the Relationship between Food Pairings and Plate Waste from Elementary School Lunches.” However, if you click the link and read the report, you will almost certainly find yourself tormented with yet more questions. I’m here to help:

Q: What the hell is a sunbutter sandwich?

A: According to an exhaustive search of the entire internet, it’s a peanut-free peanut butter sandwich made out of sunflower seed spread.

Q: What vegetable do kids hate the most?

A: Sweet potato fries, which barely edge out green peas. Oddly, sweet potato fries are far more loathed than raw sweet potato sticks. I suppose it’s because the raw sticks are served with some kind of horrific dipping sauce.

Q: What’s the most popular vegetable?

A: Tater tots.

Q: Knock it off. What’s the most popular real vegetable?

A: It’s a little hard to say, but the garden salad with ranch dressing seems to do relatively well.

Q: Is a cheese-stuffed bread stick really considered a proper entree?

A: Apparently so. And as loathsome as it sounds, I suppose it’s not really all that different from a slice of cheese pizza.

Q: Is a whole dill pickle really a “vegetable”?

A: In west Texas, where this study was done, it is.

Q: How about mashed potatoes?

A: Yep.

Q: French fries?

A: Yes indeed.

Q: Seriously?

A: It appears so.

Q: Is one of the authors really from the Alliance for Potato Research and Education?

A: That’s what it says. In fact, they’re the ones who financed this study. I can’t tell if they got their money’s worth or not.

You know what’s better than a fresh danish? An old danish on its way to the trash.

According to NPR, the Danes are very into reducing food waste right now. So into it, in fact, that they’ve reduced their food waste by about 25 percent compared to five years ago. Today, the average Dane wastes about 104 pounds of food per year. We in the U.S., for comparison, waste 273 pounds per year on average (USA, USA, USA!).

Part of Denmark’s success comes from Selina Juul, a 35-year-old Russian transplant who decided that targeting consumers, rather than retailers and food processors, would be the easiest way to address the country’s waste problem. Here’s more from NPR:

In 2008, after years of dismay at the amount of food she saw landing in Danish trash cans, Juul started the organization Stop Wasting Food.

Farmers and retailers often get the brunt of the criticism when it comes to food waste, but Juul decided to start at the other end.

“I thought, ‘Who can we move? Well, we can move the people.’ So we started focusing on the people,” she says.

Juul created a Facebook group and two weeks later started appearing in the national media, where she has been a regular figure ever since.

It was an efficient strategy, given that individual consumers are responsible for 36 percent of food waste in this country, compared to retailers (23 percent), the food processors (19 percent) and primary producers (14 percent), according to figures from the Ministry of the Environment and Food.

Maia Lindstrøm Sejersen, a spokesperson for Denmark’s largest retailer, told NPR that it’s always been in retailers’ best interest to sell as much food as they could (even the ugly or old stuff), but doing so is easier now that citizens are so conscious of waste:

She says Dansk Supermarked’s chains have sold food near expiration at reduced prices for decades. But while buying these items might once have been considered a sign of poverty for consumers, it’s now a badge of pride. And the company has responded by piling reduced price goods in dedicated areas, marked with special signage.

But, she admits, the recent movement to prevent food waste has pushed grocery stores to improve further, particularly in one area.

“Fruits and vegetables have always been tricky because they have to look lovely and fresh,” she says. “Sometimes maybe we’ve been too quick to say ‘this needs to go.’ But now that people are so focused on food waste, we can, for example, take the outer, [wilted] leaves off a head of lettuce and sell it at a reduced price.”

Anyone who’s eaten what’s under those wilted leaves, cut out a spot of mold on an otherwise good piece of cheese, or snagged a day-old bagel from their local cafe’s trash pile knows that such “garbage” is actually not garbage at all. In fact, throw a slice of that cheese on an old bagel, top with some salvaged lettuce, and scrounge up a bruised tomato, and you’ve got yourself a meal!

Today, Kraft Foods recalled 242,000 cases—or about 6.5 million boxes—of its signature macaroni and cheese after customers reported finding small pieces of metal in the product. Yummy!

Eight customers, like the one below, have found the metal, though no injuries have been reported.

According to a company press release, the recalled boxes are 7.25 oz, “Original Flavor” Macaroni & Cheese Dinner with expiration dates between September 18, 2015 and October 11, 2015, and they’re marked with the code “C2” below the date (referring to the box’s production line). The boxes have been distributed across the United States and Puerto Rico, as well as some Caribbean and South American countries. The company’s statement read, “We deeply regret this situation and apologize to any consumers we have disappointed,” and added, “Consumers who purchased this product should not eat it.”

Tom’s Kitchen: Gratin of Hearty Greens

I’m a greens fanatic: mustards, kale, collards, chard, you name it. I eat them in some form more or less every day, sometimes more than once. At this point, a meal—even (or especially) something as simple as a fried egg for breakfast—just seems naked, incomplete, without them. Their ubiquity in my daily life can make them seem unexciting for a special feast like Thanksgiving. Really, again, greens made like I always do them, sautéed with onion until tender and then finished with a lashing of vinegar? At the same time, there was no way I could imagine Thanksgiving without leafy greens—especially since they reach their peak of flavor in the fall.

So rather than forsake them or serve them the same old way, I decided to dress them up into something richer and more elegant: a gratin. To get ideas on how to pull it off, I dug into James Peterson’s excellent 2002 tome Glorious French Food. Along with recipes for the three classic gratins—potatoes, leeks, and squash—it also includes advice on how to improvise one: merely pour cream and cheese over the desired vegetable, and bake in the oven until a “savory crust forms on top.” That’s when I knew that I not only had a winning side dish for the holiday table, but also something dead simple and yet tasty: perfect fodder for a Tom’s Kitchen column.

Peterson advises that in most cases, vegetables should be cooked before the baking stage, “so that the moisture they contain is released during the precooking instead of remaining in the gratin, where it would dilute the surrounding sauce.” So I started the dish in the same way I usually cook greens—which gave me the chance to work in onions and garlic—before finishing in the oven with cream and cheese. The result was magical—sweet, creamy, tender greens, mashed up with a snap of caramelized cheese. Note: there’s also a vegan variation below.

Gratin of Hearty Greens

Enough extra-virgin olive or butter to generously cover the bottom of a large pan
3 medium onions, halved and sliced thin
3 bunches of hearty greens such as kale or collards (I used two kale, one collards)
4 cloves of garlic, smashed, peeled, and minced
Sea salt
1 pint heavy cream
4 ounces grated cheese, such as Parmigiano-Reggiano (which I used) or Gruyère
Plenty of freshly ground black pepper

Place a large heavy-bottom pot over low-medium heat, add the onions, and let them sauté, stirring occasionally, until they are very soft.

Meanwhile, prep the greens. Remove the stems that run down the center by holding the leaf in one left hand and slicing down each side of the stem with a knife. By the time you’re done, you’ll have two piles: one of stems and one of leaves. I apply a whole-beast ethos to vegetables, and consider greens stems to be highly flavorful. So bunch the stems in a pile and slice them finely, crosswise. Set aside. Now chop the greens and set them aside, too. The point of separating them is to give the stems a head start cooking, as they take a little longer.

Preheat the oven to 350 F.

Now the onions should be soft. Add the chopped garlic and stir for a minute or so, until it has released its fragrance. Add the chopped stems and a pinch of salt, stir to mix them with the onions and garlic, and cover the pot. Let them cook for about five minutes, stirring occasionally. Now add the greens and another pinch of salt, using tongs to carefully mix in with the sautéed veggies in the pan. Add about a half cup of water (or stock) to the pan, and turn heat to high until the water begins to boil. When it does, turn heat down a little bit, and let the greens simmer, covered, stirring occasionally until they’re nearly tender but still a little al dente. At that point, remove the lid and let them cook, stirring occasionally, until most of the liquid in the pan has evaporated.

Turn off the heat, taste, and add a little salt if necessary. Arrange the cooked greens in a casserole dish large enough to comfortably fit them all. Pour the cream over. Sprinkle the cheese all over the top. Give it a vigorous lashing of black pepper. Bake until the top is well-browned (30-45 minutes). Serve hot. This dish can be made a day or two in advance and reheated in a 350 F oven just before serving. Better yet, cook the greens until they’re tender and then store them in the fridge until the big day, when you bake them off with cream, cheese, etc.

Vegan variation: Replace the cream with coconut milk and replace the cheese with bread crumbs (or slivered almonds) .
